Was Bday present from my parents. That model is normally about 400$. But sometimes Williams Sonoma takes 100$ off. Made by polyscience. My brother uses 3 of the next higher model up in his 5 diamond rated restaurant... Those units he uses are 800$ a peice.

This is awesome, I love this kinda stuff. Helpful videos for everyone, something we can use at home.

Of course I don't have a vacuum sealer or a sous vide machine, so my old fashioned self has to barbecue them or pan fry :p

I have lots of questions.. 1) why are you hiding 2) is there a limit to the amount of 'bags' you can put into that container 3) when you seer your steak afterwards, do you like to crank the heat or about medium 4) if my best friend is gay do I still call him a heterolifemate or a gaylifemate, even though I'm hetero?

Darts...go to costco or bj's or sams if you have them they usually have a good deal on vacuum sealers.... they are a great thing to have for the kitchen.... use mine all the time.... even before I had the Sous Vide machine.... when i get chicken in bulk i will break it down into different meal portions some time cut into pieces some times in breast halfs.... make it easy and great when you need to pull it from the ice box and get dinner going....

Next... I'm not hiding.... im just using my phone and my mini tripod for it.... and have it close to get the audio.... plus I'm less important than some beautiful steaks in front of you... tho I am gorgeous myself :p... plus i was not really dressed and cleaned up for the video...maybe next one I'll prep more for it for you.

The limit to amount of bags in the water tank is generally as many as you can fit without impeading the ability of the circulator to move water.... the water has to be able to move all the way around if it doesn't then it creates pockets of water that are not the set temp and your food will not be cooked to the set temp... this can be a health hazard depending on the food so making sure you don't over fill it is very important.

The method you choose to finish, "sear", will determine the heat level.... for pan cooking of steaks a medium high heat is recommended but this also depends on the type of fat you use to pan sear.... i tend to recommend grapeseed oil as it has one of the highest smoke points of all cooking oils and doesn't usually add any flavor to mask your seasoning.... so with that oil you can get it just to its smoke point and then add your steak/steaks and start searing... at that temp probably 1 min to 2 max on each side is usually enough because remember you already cooked your meat... you just have to finish the crust so very quick cooking then pull them out.... now for grilling i usually do a high heat and get the rack good and hot then same as the pan toss on your steaks and go about 1-2 minutes each side because again you just want to make that crust and pull them off to keep from cooking the center.

and lastly... I believe the rule of thumb would be that unless you are engaging in non hetero congress with him then he's still your heterolifemate....as this is more of the description of your relationship rather than each individuals sexual preference....

I LOVE IT! I will try making it one day. But is it possible to do it without this machine?

not really MO, the machine regulates temp and moves the water.... just using a stove you wouldn;t be able to keep the water at a low temp consistently and would end up over cooking foods... plus the bags are only good up to a certain temp... tho there are companies out there getting into the sous vide market with lower cost units rather than this one... some are in the 150-200$ range rather than this unit which is around 400$ when not on sale.
